Description
Chit malt is a very lightly modified, pale barley malt (~1.9 °L / ~3.7 EBC) kilned at low temperature so it retains high enzyme activity and a high level of soluble protein. It delivers strong extract (≥80% fine grind) with fast conversion (5–10 min saccharification), adds body and mouthfeel, and — most notably — improves head formation and foam stability. A favourite addition for pilsners, lagers, wheat beers and any style where a fuller, longer-lasting head is wanted; its high diastatic power also helps convert adjuncts and highly-modified malts. Typical usage is up to ~15% of the grist (more is possible).
